From time to time Drew brings me up treats given to his school by students and passed along by his boss to us. We've had chocolates, Asian pears, and eggplants in the past. The other day, Drew brought a bag of chestnuts. I realized I had never actually seen or eaten a chestnut before. It reminded me of buckeye. I wasn't having any luck cracking it open so I went to trusty Google for research. It's a good thing I checked because I learned that eating a raw chestnut can upset your stomach. Now I understand the "chestnuts roasting" line from the Christmas song. In case you come across chestnuts for the first time, here is one way to deal with them.
Without a grill or oven, boiling seemed like the best method.
I had made a cross in the top so that the pressure would not cause the nuts to explode. Peeling off the skin was the most tedious part of the whole operation.
I found a Japanese chestnut rice recipe to try where you throw the boiled chestnuts into the pot cooking your rice. They end up soft and starchy, more like a potato than a traditional nut. We mixed this with left over veggies for lunch. Never know what I'm going to get next.
